Green Sunshine Smoothie {Green Monster Series}

I like to think of this as my ‘sunny silly’ smoothie. Like pure sunshine in a (sundae) glass, this one will make you fill giddy all the way down to your sandals (if you wear those – the other day I heard someone say the only man who can pull off sandals is Jesus.) Perhaps you’ll even start saying life through orange-tinted glasses…?

Give this one a try, and if it’s too scary green for you at first, just try adding a few spinach leaves, and you’ll see it doesn’t “taste” green at all. Then gradually increase the amount of greens in your smoothie. You’ll soon feel its effect on your mood: you will feel more energised throughout the day, you’ll feel lighter yet fuller than if you’d had a bowl of processed, sugary cereals – and if you enjoy this one at the office, like I sometimes do, you might get an interesting conversation started.

The great thing about smoothies is that they are so easy to transport. Pour it in a portable mug or thermos and you’re good to go. Take it to the gym, the office, on the road, wherever you work – you can have your healthy breakfast with you anywhere. Being healthy isn’t hard at all, it’s just what processed foods companies want you to think so you’ll depend on them for the rest of your life. But at what cost? You’ll just feel miserable.

Go green, you won’t regret it. Pinky swear 🙂

This recipe serves two, but I won’t lie – sometimes I have the entire thing to myself. Add more or less water/orange juice depending on how thin you like your smoothie (if you know me at all, you know I like mine so thick it’s practically scoopable.) If you don’t like tofu in your smoothies, you need to get over it and just do it add another frozen banana: this will add a frosty creaminess to your smoothie. Use kale instead of spinach if that’s what you fancy. Basically, transform this smoothie to suit your own tastes and needs 🙂

Green Sunshine Smoothie

Serves two
100 g / 4 oz silken tofu
2 large oranges, peeled and quartered
200 – 250 ml / 3/4 – 1 cup orange juice
1 big handful of spinach
1 tbsp ground flaxseed
1 frozen banana, chopped

Blend all till smooth.

  1. This looks yummy and scary at the same time – I've never had a green smoothie but I'm willing to give it a go 🙂

Quick question though is there anything you'd recommend instead of the flaxseed?

  2. Oh, do try and let me know how you like it! You don't have to add flaxseed, I just like to because it's full of minerals and vitamins. Leave them out altogether or add something else like pumpkin seeds, chia seeds, anything you like 🙂

  3. I can't believe I STILL haven't tried a green smoothie yet even after having seem them around the blogosphere for years.
Your simple, not too scary recipe might just make me try one…

P.S I'm new to your blog and so pleased to have found it- love seeing more UK vegan bloggers 🙂
