WIAW #23: Back to Normal.

Breakfast recently, as you may have seen, has often been fruity soya yogurt with granola and sliced banana. I had some mandarines left in the fridge that needed to be used ASAP, so I made myself some juice.

I found a jar of vegetarian/vegan pesto in a cupboard; I must have bought it before I left for India and then forgotten it there. I can’t remember where I got it but it’s the best I’ve ever had. A lot of pasta with pesto has been prepared in my kitchen lately. Below is my lunch: wholewheat penne with pesto, sun-dried tomatoes, mixed leaves and steamed runner beans. Delish.

And yes, I ate straight out of the pan. What? It saves me washing up time.

I recently got a coupon for Graze boxes. I’ve tried them in the past and really liked them, so I figured I might as well get a box in the mail more regularly. The after dinner mints and jaffa cake are very good (the flapjacks, as it turns out, are unfortunately not strictly vegan as they’re made with honey).

 I firmly believe in treating yourself. There’s absolutely nothing wrong with having a little romantic dinner with yourself. I draped a pretty cloth over my library turntable, lit a candle and sat down in front of a plateful of beautiful food.

 Just testing out a recipe for stuffed peppers. This one is just three ingredients and it was so. good. Stay tuned.

And while we’re testing dinner recipes, why not give dessert a go as well? This was simply amazing. Recipe will follow very very soon.

As if I hadn’t had enough chocolate for a day, I had my favourite tea: chocolate Yogi tea! “Work, but don’t forget to live.” I love this quote.
