Peanut Butter Snack Balls

Right, this is the last peanut butter recipe for a while. It is time for serious peanut butter detoxification. I will be strong. I can do this. 


While I battle with my will power, here’s a recipe for you to try out:

25g coconut flakes
100g walnuts
50g almonds
10 dates, stoned and cut in pieces
2 tbsps smooth peanut butter
1 tbsps cocoa (optional)

Soak the nuts overnight or at least for a few hours. Pulse in the food processor until you obtain a fine powder (it’s ok to have a few larger chunks). Add the dates and pulse a bit more. Combine the nut powder, dates and peanut butter in a mixing bowl with your fingers. Roll into 12 small snack balls and cool in the fridge for 30 minutes or longer. 

If you can manage to find (or better yet, make) raw peanut butter, go ahead and make this a raw snack. As if you needed any more excuses to eat peanut butter. 

Oh God, I’m talking myself out of this. No no no…!!!
