Diamond Jubilee Special: Avocado and Caramelised Onion Pinwheels


I don’t know about you guys, but I love a good picnic. If you’re hosting a street party or a picnic this bank holiday, why not try these? I guarantee vegans and meat-eaters alike will love these. 


Makes 4 rolls, or 24 pinwheels
Ingredients:
4 corn or soft flour tortillas
1 ripe avocado
1 medium red onion, peeled and chopped
your favourite hummus (optional)
2-4 tbsps vegetable oil
juice of half a lime


Instructions:
Heat the oil in a medium-sized frying pan. When it’s hot, turn down the heat to medium (so you don’t burn the onion), then add the onion and fry until soft and caramelised. It shouldn’t get black or crispy; that means it’s burnt, so keep an eye on the cooking. It shouldn’t take more than 20 minutes. 
Mash the avocado with a fork and spread this on the tortillas. Drizzle some lime juice over it. If you want to add hummus as well, do that first. Add the caramelised onion and roll up the tortillas. Slice them each into 6 pinwheels, wrap in foil, and get going to your picnic.
