Happy Birthday, Dad! Ferrari Cupcakes

It’s my darling dad’s birthday on 6 April! I was struggling a bit to find him a worthy present; I couldn’t just get him yet another miniature car… I was racking my brains for a good idea when my friend George came up with the obvious: just make a recipe video. My dad lives halfway across the world so he can’t eat whatever I make him, but I’m sure he can appreciate the gesture (and hopefully the video, too!).

Makes two cupcakes

30g plain flour
30g brown sugar
1/2 tsp vanilla essence
25ml soya milk
1 flax egg: 1 tbsp ground flaxseed + 3 tbsps water
Royal icing in yellow and red
Black writing icing

In a small bowl, combine the flour, sugar, vanilla and soya milk. Mix your flax egg separately, then add to the batter and combine well. Pour the batter into two cupcake moulds and pop in the preheated oven at 180ºC for 40 minutes. 
Meanwhile roll out the icing for your cupcakes. You will need two red disks to cover the top of your cupcakes and two long yellow strips to wrap around the cupcakes. When the cupcakes are cooled, cover them with the icing like in the video and draw on the top with the icing pen. Get creative with it; it doesn’t have to be a Ferrari cupcake!

  1. It's great to see all my efforts culminate into such awesomeness. I love making cupcakes! As simple an idea as it is, it can become one of the most brilliant with some personal touch.
    That was a very cool Ferrari horse you drew. /jealous
