Baileys White Chocolate Truffles


Valentine’s Day has nothing on Easter when it comes to chocolate. And this year, I’m going all out. No restrictions whatsoever; diets out of the window, resolutions down the toilet! Just sit back with some homemade cruelty-free chocolates and enjoy. 


For the grown-ups, we’re starting out with boozy truffles. My all time favourite alcoholic beverage is Baileys. When I switched to veganism a year ago I was almost heartbroken to discover my beloved drink contained dairy (Irish cream, duh!), so I resolved to save it as an occasional vegetarian treat, just like chocolate. Those were the two things I could not give up. 

BUT Oh She Glows blogger Angela has come to the rescue with her homemade vegan Baileys. I nearly cried tears of joy. Oh happy day! Rejoice! Drink up, me hearties! Feast yourselves on this delightful, sinless alcohol! 



Ok, ok, I’ll contain myself. But still, there I was with two jars of Baileys and I couldn’t just drink it all, no matter how good that idea sounded to me. And so these boozy babies were born.


Ingredients:
100g cashews, soaked for at least 30 minutes
1tsp cocoa powder, preferably raw
5-6 pitted dates
1 and 1/2 tbsp vegan Baileys
1 tsp agave sweetener (optional)
200g vegan white chocolate
cocoa powder, to dust

Instructions:
Blend the nuts and dates to a fine powder, then combine in a medium to large bowl with the cocoa powder, Baileys and sweetener. Use your hands: this is the easiest and most fun method. Roll into small  balls (just a bit smaller than a golf ball) and leave to set in the fridge. 
Over a pot of hot water melt the white chocolate in a small bowl. Keep stirring with a wooden spoon. Please be very careful to not let it burn: white chocolate is basically cocoa bean fat, and it burns very quickly. Add a splash of water if it isn’t melting very well. When it is properly melted, take off the heat and roll the balls into it, covering them well, and placing them back in the fridge immediately before they start to melt. When the chocolate has set, dust the balls with cocoa.
