STUFFED Part II: Chocolate Chip Cookie Pancake and Confetti Pancake

Who doesn’t love a chocolate chip cookie? And who wouldn’t love to eat a whole box of them for breakfast?


Hold the cookie, girlfriend–you don’t want that in your thighs, or your belly. But I know where you’re coming from; you just have to have your chocolate this morning. No problem–so do I! 


The answer: a chocolate chip (cookie) pancake!



Yields 2 pancakes (1 serving)


Ingredients:
100g plain flour
1 tsp baking powder
1 tbsp dairy-free chocolate chips
1 tbsp brown sugar, or 2 tsps maple syrup, or 1 tsp stevia
100ml soya milk, or any non-dairy milk of your choice
pinch of cinnamon (optional)


Instructions:
Combine the dry ingredients in a mixing bowl, then add the non-dairy milk and chocolate chips.




Variation: Confetti Pancake


The same recipe as above, only replace the chocolate chips with coloured sugar pearls. They will discolour slightly when they cook in the pan, but they still look pretty. 



Nutrition info:
One serving (two chocolate chip cookie pancakes) contains 527 calories, 7.9g of fat, 18.9g of sugar, 2.8g of fiber, no cholesterol and 14.2g of protein. This is based on the recipe using 1tbsp of brown sugar; for a no sugar version, use stevia. 
It’s not my lowest calorie recipe, but remember, it’s a chocolate chip cookie pancake. Low calorie doesn’t really fit into that type of pancake. This one is for occasions only 🙂
